Rachael Finch shares simple recipe for chicken minestrone soup

Rachael Finch shared the recipe for her kids’ favorite soup, which can be made in four easy steps.

The 33-year-old model says daughter Violet, seven, and son Dominic, four, “love” their healthy chicken minestrone, which is made from basic ingredients like carrots, onions, celery, pasta and passata.

Rachael, who is raising children in a $ 1.65 million penthouse in Sydney with husband Mike Miziner, says the soup is “easy peasy” and can be pre-made as it stays fresh for days.

A video of the recipe has been viewed 76,100 times since it was uploaded to the Miss Universe Australia 2009 Instagram account on Friday.

The beauty queen, who became a businesswoman and is the founder of the nutritional supplement brand Kissed Earth, said she first preheat her oven to 170 degrees Celsius and put all the ingredients – except the pasta – in a baking dish.

The dish should be filled with a finely chopped onion, two carrots, two stalks of celery, two cups of passata, three cups of broth and 400 grams of chicken breast, seasoned with salt, pepper and three bay leaves.

Once the ingredients are mixed together, Rachael covers the dish with a lid and puts it in the oven for 45 minutes.

Then she takes the dish out of the oven, stirs in a cup of whole wheat pasta and lets it bake for another 30 minutes.

Rachael then serves the minestrone with a handful of freshly chopped parsley – it’s that simple.

A video of her preparing the dish, which has garnered 1,843 likes since it was uploaded on September 2, drew enthusiastic responses.

‘Love that, love a classic minestrone!’ wrote a woman.

Another added: “Looks delicious! And just for the not-so-enthusiastic cook over here. ‘

It’s not the first time Rachael has delighted fans with a nutritious homemade soup.

Earlier this year she shared a simple toasted tomato soup recipe that she swears by during the cold winter months.

Rachael Finch’s Chicken Minestrone Recipe

ingredients

1 onion, diced

2 carrots, diced

2 stalks of celery, diced

2 cups of passata

3 cups of broth

400g chicken breast, diced

3 bay leaves

1 1/2 teaspoons of salt

1 teaspoon pepper

1 cup of whole wheat noodles (or brown rice noodles for gluten-free)

method

1. Preheat the oven to 170 degrees Celsius. Put all ingredients except the pasta in a baking dish and mix well.

2. Cover with a lid and put in the oven for 45 minutes.

3. Take the mold out of the oven, stir in the pasta, then bake for another 30 minutes.

4. Distribute on plates and cover with freshly chopped parsley as desired.

While every day on Rachel’s plate varies, she tries to eat according to the seasons, with soups and root vegetables in winter and salads and smoothie bowls in summer.

To make her favorite soup, according to Rachael, you need tomatoes, garlic, thyme, extra virgin olive oil, vegetable broth, shallots, tomato paste, cannelloni beans and parmesan, and crispy bread for serving.

She also likes to add a teaspoon of her own Kissed Earth Magic 8 Vitality and Immunity powder to the mix for “extra immune health” as the temperature drops.

The recipe, which takes less than an hour, requires a food processor or hand blender and access to an oven.

How to make Rachael Finch’s favorite winter soup

Serves one

INGREDIENTS

Rachael shared the simple recipe (pictured) on her Instagram page

500g Roma tomatoes

1 clove of garlic, finely chopped

1 sprig of thyme, reserve some for serving

1 tsp Kissed Earth Magic 8 powders (for extra immune health)

Salt and pepper to taste

2 teaspoons of extra virgin olive oil

1 brown shallot, chopped

1/2 tbsp tomato paste

2 cups of vegetable stock

500g cannelloni beans (1.5 cans)

50g parmesan, grated, for serving (optional)

2 slices of bread of your choice, for serving

METHOD

1. Preheat the oven to 200 degrees Celsius and line a baking sheet with baking paper.

2. Place the tomatoes and garlic on the baking sheet, sprinkle with thyme and season with salt and pepper. Bake for 20-25 minutes, or set aside until very soft.

3. In the meantime, heat the oil in a saucepan over medium heat. Fry shallots for a few minutes until tender. Add tomato paste and fry for another two minutes.

4. Add tomatoes, broth, Magic 8 and 3/4 white beans and simmer for 10 minutes.

5. Puree the soup with a hand blender or food processor. Put the soup back in the pot, stir in the remaining beans and heat.

6. Cover the soup bowls with parmesan and reserved thyme leaves and serve with bread.
