I ate a lot of fresh corn around this time last year. But this year I’m really enjoying it. Sweet milky white grains, almost like nectar, with a fragrance. It is also gentle on the bite when raw. Am I imagining it or is this summer’s harvest really involved?
Like many of you, I eat weight with corn and like to eat until it’s graceful on an autumn night. At the start of the season, toss on the grill with the whole salmon and eggplant, roll on the pesto and steam in the microwave as the romaine lettuce teaches at Brooklawn Farm Market (mussels, on a plate and cook). 4 minutes) Make a simple meal time correction and separate it from the plunger. I love cheese-lined pizza dough corn, so I felt it would be a great addition to grilled cheese. The sweet and savory relationship is attractive enough, but the contrast between the sticky and crunchy textures takes this classic sandwich to the next level. In fact, this sandwich alone is a good reason to freeze corn in winter.
Make two sandwiches.
- 1/2 cup and 2 tablespoons of grated cheddar, pepperjack, or grated cheese, whatever makes you happy
- 1/2 cup corn kernels (from a corn cob)
- 1-2 tablespoons unsalted butter, soft
- 4 Favorite Sandwich Breads: Choose from Rye, Whole Wheat, Sourdough
- Optional, but nice: 1 tablespoon of fresh basil, cut into thin ribbons and lightly heat up in the form of hot sauce or chopped cucumber pepper (optional)
- Oil or cooking spray
1. In a medium bowl, stir together 1/2 cup of cheese and corn. It should harden quickly in your hands. Shape into about 4 equal pieces (about 1/8 cup each).
2. Place two pieces of bread and butter on each slice of bread.
3. Place the optional add-on on top of the cheese.
4. Press the second side up.
5. Heat a grill pan or cast iron pan over medium heat, brush with a tablespoon of oil (or cooking spray), and add more as needed.
6. Cook the sandwich in portions for about 3 minutes until the first side turns golden brown.
7. Rotate with a cast iron sandwich press or heavy pan lid to weigh and melt the cheese.
8. Heat for about 2 minutes until golden brown.
Add corn kernels to the frittata for a fluffy, souffle-like finish.
Corn Forward Frittata
When you have a copy of your dog’s ears, stick with the cooking.
Kitchen tip: Prepare and chop everything before heating the pan. Frittata will be together soon. The following amounts are suggestions and are intended as a guide. For example, if you want to leave out diced peppers, consider adding more corn or heavier tomatoes and herbs. If you like the creamy richness of butter for sauteed vegetables, just come to us. (If you don’t want it, you know what to do.) You can’t go wrong.
There will be 4 servings.
- 6 large eggs
- 3/4 teaspoon salt, plus for seasoning
- 1/4 teaspoon black pepper, for seasoning
- 3-4 tablespoons of oil and / or butter
- 1/2 cup onion, shallot, or spring onion, finely chopped
- 1/2 cup pepper or chilli pepper, diced (optional)
- 1 to 1 1/2 cup corn kernels (2 to 3 ears of corn)
- Optional add-on: cut into 1/4 cup of freshly chopped parsley or basil, ribbon. 5-6 cherry tomatoes, half
1. Break the egg into a medium bowl. Add salt and pepper and whisk with a fork.
2. Heat a 10-inch or 12-inch cast iron pan over medium-high heat. Add 3 tablespoons of oil and tilt the pan to coat. (If you are using butter, melt this first.)
3. Add onions, flip them until covered with tongs and cook for about 5 minutes, adjusting the heat as needed. It’s okay if the edges are a little crispy.
4. Add diced peppers (if used) and stir until the onions are covered. Add corn. When the mixture appears dry, add the remaining tablespoon of oil.
5. Turn the corn until it is covered with other ingredients and cook for about 3 minutes. It’s okay if the corn is burned. Sprinkle lightly with salt and pepper.
6. Reduce the heat under the skillet from medium to low. Place the egg mixture in a pan and tilt to distribute it evenly.
7. If used, place tomatoes and herbs on top.
8. Cover and cook for 8-10 minutes, until the eggs are almost firm.
9. Remove the pan from the heat and let it cool for a few minutes. Cut the frittata into wedges and enjoy warm or room temperature.
Short noodles are cooked in corn on the cob soup and mixed with sauteed corn, onions, and pobrano pepper.
This dish is twice as awesome. After you’ve removed the kernels, make a quick corn broth that will serve as “cooking water” for the noodles. It’s a fun hack that uses kitchen scraps to add a delicate sweetness to pasta. Like Frittata, this recipe is an improvisation and creativity template based on what you have on hand.
Finally, I love the fiery pop of chili oil, but if it sounds too strong, consider another side dish that adds salt and umami depth, from cheese to olives to ham.
There will be 4 to 5 servings.
- 1 1/2 to 2 cups of corn kernels (3 to 4 ears)
- 4 tablespoons unsalted butter or olive oil (or a combination thereof)
- 1/2 medium onion, cut in a crescent shape (3/4 to 1 cup)
- Choose 1/2 cup of paprika or chili peppers and cut them into thin strips
- About 11/4 teaspoons of salt
- 1/4 teaspoon black pepper
- Fresh thyme or oregano from a few twigs (Plan B: 1 teaspoon dry)
- Your favorite 3/4 pound short pasta
- 1/4 cup fresh basil leaves, cut into thin ribbons
- 12 to 15 cherry tomatoes, half
- Garnish with optional additives: 1 grated lemon peel. Grated Pecorino or Parmigiano Reggiano cheese. Chili oil; 1/4 cup chopped olives, 2 ounces thinly sliced ham. Basil pesto 1/2 cup
1. Prepare corn on the cob soup: Put the cut corn on the cob in a large saucepan and cut in half if necessary.
2. Add 12 cups of water and bring to a boil over high heat. Reduce the heat, cover and simmer for 15 minutes. Remove the flasks and continue to simmer over low heat until the noodles are ready to cook.
3. In the meantime, heat the butter in a large pan and tilt the pan until the surface is covered. Add the onions, turn until covered, and cook until tender, about 5 minutes.
4. Add the paprika, turn until the onions are covered and cook for about 3 minutes.
5. Save 1/2 cup of corn kernels. Add the remaining corn to the onion mixture and toss until covered. Season with 1/4 teaspoon salt, black pepper, thyme or oregano.
6. Cook until mixture is soft and sweet. You can keep the heat low while you cook the pasta.
7. Bring the corn broth to a boil over high heat. Add the remaining teaspoon of salt.
8. Add pasta, stir and bring to a boil. Cook until al dente, following the instructions on the package.
9. Skim the pasta with a long handled colander and place in a large bowl.
10. Pour the corn and onion mixture over the top.
11. Gently turn with tongs until the noodles are completely covered.
12. Try salt and pepper and change the seasons as needed.
13. Add the remaining corn, basil, cherry tomatoes and optional garnishes. Cassette the corn broth as needed. Pasta also helps drink part of the soup and make sauces.
14. Eat hot.
