What you need to know to eat healthier

Bread is back! The bread market has been declining in recent years, likely due to concerns about carbohydrates. Given the stress of the coronavirus crisis, almost a third of Americans have comforted themselves in bread, according to a national survey by the Grain Foods Foundation.

And while bread may have a moment, consumers seem to be struggling to identify which breads and other grain-based foods are healthier, according to a new report published in the August 2020 issue of Public Health Nutrition. The results suggest that consumers are often confused by labels stating that a product contains whole grains, which puts them at risk of choosing less healthy breads, crackers, cereals, and other products.

Here’s what you need to know about grain foods like bread and how to enjoy them healthily.

What is a whole grain compared to a refined grain?

All grain foods, like rice and wheat, start out as whole grains, which means that all parts of the grain, including bran, endosperm, and germ, are present. This is important as each of these components provides health-promoting nutrients like fiber, B vitamins, magnesium, and antioxidants.

The difference between whole grains and refined grains is that refined grains are missing one or more parts of the grain structure, and that removal removes up to two-thirds of the nutrients in the grain. After a grain has been grafted, some of the missing vitamins and minerals can be added to it, but the nutrients are not added back in the same proportion. While refined grains can help you fill in nutrient gaps in your diet, your body doesn’t respond to refined and fortified grains like it does to whole grains. Foods in their entire state tend to be the most nutritious – and that is certainly the case with whole grains.

Is it a big deal to eat white bread every day?

There is always room in your diet for less healthy foods when you choose otherwise nutritious foods like vegetables, fruits, legumes (beans, legumes, and peas), nuts, seeds, and whole grains. How to choose whole grains
