Add Mediterranean Flair to Your Dinner Table – Pasadena Weekendr

Over the past year, many people have missed the opportunity to travel and experience the sights, sounds, and tastes of the world, but it’s easy to explore other cultures and cuisines by experimenting in the kitchen.

If you want to transport your taste buds to the coasts of Spain or the beaches of Greece, the Mediterranean diet is one of the best places to start. Renowned chef Geoffrey Zakarian recommends these tips to help amateur cooks improve their dishes and to easily incorporate the popular diet into everyday cooking.

Reach for pantry staples. There is no single definition of the Mediterranean diet, but it is rich in vegetables, fruits, whole grains, nuts, seeds, olive oil and seafood. By stocking your pantry with canned versions of ingredients like beans and fish, you can easily add them to your favorite dishes. Yellowfin tuna noodle salad with rocket pesto and dates and tuna aioli dip with balsamic drizzle are spicy ways to bring Mediterranean flair to your dining table.

Add seafood. Eating more seafood is one of the main principles of the Mediterranean diet. Tuna salad is a tried and true dish that can be used to incorporate fish into your menu. To make it more nutritious, opt for tuna that is wrapped in extra virgin olive oil so you don’t have to add a lot of mayo. Tuna aioli dip with balsamic drizzle

Preparation time: 15-20 minutes

Cooking time: 10-15 minutes

Servings: 4

6 ounces genoa albacore tuna in olive oil

1/4 cup balsamic vinegar

1 dried bay leaf

1 sprig of fresh rosemary

1⁄3 cup of mayonnaise

2 tbsp capers, drained

2 anchovies

1/2 lemon, juice only (approx. 1 1/2 tablespoons)

raw vegetables like carrots, celery, cucumber sticks, endive leaves, fennel and paprika strips for dipping

Drain the tuna, collecting 2 tablespoons of oil.

Mix the balsamic vinegar, bay leaf and rosemary sprig in a small saucepan. Bring to the boil and reduce until syrupy, about 1 tablespoon. Allow to cool slightly; Throw away the bay leaf and rosemary sprig.

In a blender or food processor, blend the tuna and reserved oil, mayonnaise, capers, anchovies and lemon juice into a smooth dip. Transfer to a shallow serving bowl. Drizzle with balsamic syrup. Serve with raw vegetables.

Yellowfin tuna pasta salad with rocket pesto and dates

Preparation time: 20-30 minutes

Cooking time: 20-25 minutes

Servings: 4

2 cans (5 ounces each) of Genoa yellowfin tuna in olive oil, drained

1/2 cup pine nuts

4 cups of arugula

1 clove of garlic

2 tablespoons butter (optional)

1 cup of grated Parmigiano Reggiano, plus additional for garnish (optional)

2 lemons, peel only (optional)

1/2 teaspoon kosher salt

1/2 teaspoon of freshly ground black pepper

3/4 cup extra virgin olive oil

8 ounces whole wheat orecchiette

1/2 cup sun-dried tomatoes in a glass in oil, chopped

1/2 cup dates, pitted and quartered

1/4 cup Kalamata olives, pitted and chopped

1/4 cup dill, chopped (optional)

1/4 cup parsley, chopped (optional)

Preheat oven to 325 F.

Roast the pine nuts on a baking tray for 8-12 minutes, or until golden brown. Set aside to cool.

Bring a large saucepan of salted water to a boil. Prepare an ice water bath by filling a large bowl with cold water and ice. Stir rocket into boiling water and cook for about 30 seconds until light green and tender. Drain the arugula, immediately shock in ice water and set aside so that it can drain completely; cover with towel.

Put arugula in a blender or food processor; Garlic; Pine nuts; Butter if desired; Parmesan cheese; Lemon peel, if desired; Salt; and pepper. Puree on a high level, work in olive oil to the desired thickness.

Put the pesto in a bowl and seal tightly to avoid discoloration.

Bring a large saucepan of salted water to a boil.

Add pasta and bring to the boil again, stirring occasionally. Try the pasta 2 minutes earlier than on the package instructions until ready. Drain after cooking and transfer to a large bowl. Do not rinse.

Carefully add the pesto until it is evenly distributed. Fold in the tuna, sun-dried tomatoes, dates and olives.

Distribute in shallow bowls and top with additional Parmigiano-Reggiano, dill and parsley as desired.

For years I struggled to find the perfect dairy-free breakfast bars. They have to be hearty, but with a delicate texture. Simple, healthy ingredients are a must for the taste to be like homemade. And they mustn’t contain too much sugar. Fortunately, all of my wishes were granted the day I tried Enjoy Life Breakfast Ovals. These oaty, filling snacks are my favorite morning take away snacks. Great taste
