Add more grains to your diet

Grains are a big part of our diet. In fact, grain was the basis of the USDA food pyramid before it was replaced by the MyPlate system.

For many, the variety of grains does not go beyond grain, oats, rice and wheat flour. But there are so many other grains, some of which are older than our modern grains – and they’re packed with nutrients and complex flavors. From baking to cooking, here are 10 ancient grains that you should try in your kitchen.

Amaranth

This naturally gluten-free grain has been grown for around 8,000 years. Once the staple food of the Incas, Mayas and Aztecs, amaranth is rich in protein that other grains lack, all nine essential amino acids, fiber, antioxidants and other micronutrients.

It has an earthy and nutty flavor, and while it can be enjoyed like a granola, it can also be ground into a flour that goes well in pancakes and breads.

Spelt

Spelled, an ancient type of wheat, is incredibly suitable for baking bread and muffins, biscuits and other desserts. It adds a sweet nuttiness to whatever it’s added to, is an excellent source of fiber, has more protein than regular wheat, and is water soluble, which makes it easier to digest.

If you’re experimenting with ancient grains, try baking spelled first, as this can completely replace all-purpose flour in most recipes.

Einkorn

Einkorn is the oldest wheat known. Scientists believe it was grown up to 10,000 years ago. Because it’s nutritious and full of flavor, it’s the perfect substitute for whole wheat flour, especially when it comes to rustic whole wheat breads.

Note that if you bake bread with einkorn, it will turn a bright yellow color due to the carotenoids in the grain. Some believe that it is these carotenoids that give einkorn its anti-inflammatory properties.

Khorasan

Khorasan, sometimes called Kamut or even Kamut Khorasan, is an ancient grain that originated in Mesopotamia and Ancient Egypt. Its firm texture paired with its earthy, nutty taste makes it a great cereal for baking. However, it is not a complete substitute for all-purpose flour like spelled.

Experienced bakers recommend using only 25 – 50% Kamut Khorasan, depending on the recipe.

millet

If you are on a gluten-free diet, millet is an excellent substitute for the baking cereal. It gives a sweet corn flavor and texture to whatever is baked in it. And since millet is a seed, it can be ground into flour or cooked like a whole grain. When cooked like a whole grain, it becomes fluffy and not as chewy as other grains like farro or quinoa.

Emmer

Emmer are varieties of farro along with einkorn and spelled, but if you’ve eaten farro in a restaurant, it was most likely emmer. It can be cooked like a whole grain or ground into flour for baking. Regardless of whether you cook or bake with emmer, it is one of those grains that go great with hearty flavors such as onions, garlic and other aromatic spices.

Sorghum

Like many ancient grains, sorghum can be used in baking or cooking, but unlike many of these grains, sorghum can be made into a syrup. Sorghum syrup is sometimes confused with molasses, but they differ in origin, taste, texture, and processing techniques. Sorghum syrup is also thinner and has a slightly more sour taste than molasses, which makes it more suitable for salad dressings and sauces.

Thanks to rye whiskey and rye bread, rye is slightly more common than some of the other ancient grains on this list. Rye is a grass that is over 7,000 years old and belongs to the wheat family. It’s mainly used to make flour, but it can also be used for brewing beer and for distilling spirits like whiskey and even vodka.

If you’re keeping an eye on your blood sugar levels, barley is an excellent choice as it’s one of the lowest glycemic index cereals on the market. Barley can be boiled in water or with a broth until it is soft and tender. Barley can also be ground into flour and used as a complete substitute for all-purpose flour in baking.

Buckwheat

Buckwheat, another gluten-free ancient grain, is an excellent source of fiber and other nutrients. There are many ways buckwheat can be used in the kitchen. Buckwheat is ideal as a flour in pancakes, bread, scones and muffins. It can also be used to make gluten-free noodles and pasta.

Buckwheat can be enjoyed as a whole grain in salads, in soups and as a filler in meat or vegan burgers.

For years I struggled to find the perfect dairy-free breakfast bars. They have to be hearty, but with a delicate texture. Simple, healthy ingredients are a must for the taste to be like homemade. And they mustn’t contain too much sugar. Fortunately, all of my wishes were granted the day I tried Enjoy Life Breakfast Ovals. These oaty, filling snacks are my favorite morning take away snacks. Don’t tell me that the corners of your mouth don’t turn up a little when you look at these boxes.

Less sugar, of course

Since I have a sweet tooth, I try to pay attention to added sugar and reduce it in sensible places. Enjoy Life Breakfast Ovals are simply sweetened with brown sugar and dates and contain no sugar substitutes. However, they have less added sugar than any competitor breakfast bar I’ve tried, and they have a balanced diet that will keep my body and brain energized.

Great taste

I’m dairy-free, non-gluten-free, nut-free, peanut-free, soy-free, etc. I don’t have any dietary restrictions that would justify top allergen-free. But Enjoy Life Breakfast are oval my favorite breakfast bars – hands down. Hannah, our Go Dairy Free employee for 15 years, is vegan without limits. And she agrees – these handy snacks are delicious! Travel-ready texture
