We were all there: tired and hungry and the desire for dinner would arise spontaneously. You want something now and it has to be delicious. Pasta is a good choice, but even with the official pasta sauce power rankings for reference, plain tomato sauce doesn’t always cut. Do not worry. Here are 11 recipes that use 11 ingredients or fewer and can be made. Start finishing in about the time it takes to cook the pasta (30 minutes or less).

At such moments I go to a large bowl of Spaghetti Aglio e Olio, this classic Italian sauce without sauce made from garlic olive oil and crushed chili peppers (and, for me, a lot of ground black pepper). The aroma is intoxicating; the taste, intense. You’ll want more long after it’s all gone. And it’s so easy that you even have time to toss a salad with it.

The garlic and olive oil combination serves as the basis for many equally or almost as simple and delicious preparations, with the operational words being simple and delicious. Fava beans add some protein in a riff on scampi (the sprinkle of lemon really makes the flavors pop). Nutrient-rich, inexpensive canned sardines give Pasta Chi Sardi a mari with a unique depth of flavor, and toasted breadcrumbs add to the texture of the dish. The capers in midnight noodles add a bit of saltiness to the party, which is balanced with the sweet butteriness of pine nuts.

Orecchiette with Broccoli Raven and Garlic Bread Crumbs adds a few more layers of texture as well as flavor, and you can check “eat your vegetables” off your daily to eat list. Pasta with Italian sausage and broccoli brings new flavor and another vegetable to the plate, and the spicy sausage enhances the already high taste factor of the dish.

Too Much Garlic? (Granted, I can’t really understand this phrase, although I know it matters to some.) The green garlic in whole wheat spaghetti with green garlic and fried egg has a gentler, more subtle garlic flavor than that of ripe onions. The delicate stems intertwine with the strands of spaghetti, which, when coated in egg yolk and garlic oil, are absolutely dope.

Still Too Much Garlic? It’s completely optional in tomato pasta all ‘Amatriciana, and neither the ever-popular cacio e pepe nor the spaghetti carbonara even suggest including garlic.

If that jar of marinara in your pantry keeps calling your name, you can use it for pasta with a pan and treat it with additional ingredients. Similar to making lasagna with these non-boiling lasagna sheets, the angel hair cooks in and soaks up the sauce, making the noodles extra aromatic. Even better: there is no separate pasta pot for washing.

The best news? You can make any of these dishes in 30 minutes or less.

Three ingredients: spaghetti, pecorino and black pepper. That and a little salted water in which the pasta was cooked. Throw them together and you have a great dish.
